Kimchi Turkey Burgers
I was browsing Eating Well magazine the other night when I came across this kimchi turkey burger recipe. My husband requires meat at every meal and I’m not a huge meat-eater so new creative (and easy!) recipes are always welcome. This one was such a breeze and it felt very different from my usual coconut crusted chicken. I’d love to hear what your go-to burger toppings are when you want to spice things up! Ingredients: 1 lb organic ground turkey 3 scallions, sliced 8 tablespoons chile paste, divided 1 tablespoon toasted sesame oil 2 tablespoons mayonnaise 4 small whole-wheat hamburger buns 12 slices cucumber 1 cup kimchi (I used a medium spicy variety) Directions:- Combine turkey, scallions, 5 teaspoons chile paste and sesame oil in a medium bowl- Gently knead together with your hands.- Form into 4-6 burgers depending on what size you prefer- Grill if you can but if you don’t have a grill, heat 1 tblspn of olive oil in a pan and sautee the burgers for about 5 minutes on e

Nipping unhealthy habits in the bud is much harder than it sounds. If you drink soda, or you don’t get enough sleep, then you know that it’s not just a matter of deciding to change your habits. This seems a bit counterintuitive, I know, but if you are restricting your calorie intake, then you are much more likely to slip and overindulge. Instead, focus on eating whole, real foods and cutting out processed foods as much as possible. It’s also important to cut yourself a break once in a while! If you eat a cupcake at an office party, it certainly doesn’t mean you failed. So instead of eating three more and restarting your diet the next day, just forgive yourself and get back on track. Not too sweet, but full of warm, fall flavors that are sure to satisfy on these chilly autumn nights. The best part? It’s gluten-free and vegan so everyone, even those with dietary restrictions, can enjoy this perfect dessert! Spiced Apple & Cranberry Crisp Ingredients: 8 cups apples, peeled, cored and segmented 1 cup water 2 tablespoons of arrow root starch 1/3 cup maple syrup 1/2 cup cranberries Topping 1/2 cup gluten-free old fashioned rolled oats 1/2 cup brown sugar 1/4 teaspoon nutmeg 1/4 teaspoon cloves 1 tablespoon cinnamon 3 tablespoons coconut flour 1/4 cup coconut oil, melted Instructions: Preheat oven to 350 degrees. As an avid runner, I never thought that I would enjoy any cardio as much as I love running. When a serious hip injury struck, my physical therapist forbade me from any high impact exercise, and I discovered the only cardio that could give me that “runner’s high.” Spinning. I was so intimidated to go to my first indoor cycling class. All of the other students seemed to know what they were doing, and I had no idea how to set up my bike or what the different positions were. I pushed back my fear and jumped on the bike anyway. This one spinning class changed my workout regimen for good. I took classes frequently, even using the bikes when there were no classes available. After one year of spinning, I became a certified spinning instructor. Now, I teach at least two spinning classes per week. Who knew my injury would lead to a new passion and a part-time job! Gluten-Free Dark Chocolate Brownies
Last year, I gave up gluten for 40 days. I felt so much better, I had more energy, and I was able to get more creative in what I ordered at restaurants! Despite this fact, I was craving brownies like crazy, so I decided to find a recipe for gluten free brownies. I really didn’t want to end up with a weird texture so I scoured the internet for a recipe that spoke to me. I found this one from the Gluten Free Goddess. The only thing that I changed about her recipe was the butter for coconut oil. At first I tried them with coconut oil but the coconut flavor was so overpowering, that it just didn’t work for me. They came out surprisingly well and even my husband enjoyed them! You definitely have to like dark chocolate to like these brownies because they are super decadent. Next time I make them, I think I’ll substitute the dark chocolate chips on top with peanut butter chips to bring in a different flavor. If you try that out, let me know! What we want to eat and what we need to eat are not always the same. For example, sometimes I just want to eat a warm and hearty bowl of pasta for dinner. This usually happens when its cold and rainy outside or I just need some comfort food. However, I know that what my body actually needs, and what will make me feel best is fresh vegetables. This recipe is the answer to my dilemma. It’s filling and comforting but it packs a major vegetable punch. I like to add lots of green vegetables, which is why I chose to add green tomatoes, but feel free to throw in any of your favorite vegetables.
